The Taste of El Niño: How Drought and Heat Are Rewriting the Chemistry of Wine, Oil and Linen

As extreme weather shifts the meteorological baseline, the 2026 harvest faces a fundamental change in product quality. The overlay of El Niño and European drought is being measured in the structural chemistry of luxury goods: in the acidity of the wine, the polyphenol balance of the olive oil and the tensile strength of the flax fibre.

What we know

  • The WMO put the probability at close to 100 percent on 3 September that this El Niño holds through February 2027. The Niño 3.4 anomaly reached weekly peaks of 2.6 °C above the long-term mean in mid-August, with about 2.9 °C expected in November.
  • Europe’s heat came from its own drivers. Continental blocking patterns, not the Pacific, produced France’s hottest July on record and Britain’s warmest summer since measurements began.
  • Austrian grapes came into the cellars in mid-August at 9.0 grams of acid per litre, against 13.7 a year earlier. Burgundy calls the fruit magnificent and reports 40 percent less of it.
  • Andalusian groves took 42 to 44 °C in early July. Mild water stress raises the polyphenols that carry an oil; past a threshold the tree drops its fruit to hold moisture, and no one can yet say which happened.
  • Flax across the northern European belt went into a dry April with little rain on the seedlings. Drought lowers the density and tenacity of the fibre, and unlike wine and oil it gains nothing in exchange.

By late summer 2026 the World Meteorological Organization had stopped hedging. When the agency released its updated bulletin on 3 September, it revised the forecasts of the preceding months sharply upward: the probability that the current El Niño persists into February 2027 now stands at close to 100 percent. In May that figure was 80 percent. Whether the event also breaks the records of 2015/16 remains an expectation rather than a measurement. Across Europe, meanwhile, a summer driven by entirely continental forces was running its own course.

The two weather systems now converge on a single harvest. What that means for the quality of wine, olive oil and linen can already be measured precisely in European cellars and mills, in grams of acid, in milligrams of polyphenol, in the tensile strength of a flax fibre. A field report by Eva Winterer on a season that is redrawing the terms of agricultural luxury.

The first interim figures from the trade bodies show the scale of it. Austrian growers recorded a drop in acidity to an average of 9.0 grams per litre by mid-August, against 13.7 grams at the same point last year. Burgundy expects exceptional quality and reports a shortfall of roughly 40 percent. Andalusian growing regions logged temperatures of 42 to 44 degrees in early July, which has made yield forecasts for olive oil all but impossible. And the flax belt of northern Europe is carrying the consequences of a spring so dry it checked the seedlings early.


A Pacific Giant Beyond the Existing Scales

Sea surface temperatures in the central and eastern Pacific have climbed far past their usual thresholds over recent months. The decisive Niño 3.4 index, which measures the departure of that region’s sea surface temperature from its long-term average, stood 1.5 degrees above the mean between May and July. In July the figure reached 2.0 degrees, before weekly peaks of 2.2 to 2.6 degrees arrived in August. Beneath the surface, researchers recorded anomalies of more than 8 degrees in some areas. The WMO expects a peak of around 2.9 degrees in November. For context, an event counts as very strong from 2.0 degrees, and only three have crossed that line since 1950. The record belongs to 2015/16, at 2.6 degrees.

At the press conference in Geneva, Secretary-General Celeste Saulo observed that a trajectory of this kind carries the event beyond the scales used for monitoring over the past four decades. UN Secretary-General António Guterres made the same point about the underlying data, which he said leaves no room for interpretation. For global agricultural markets, the consequence is above all a redistribution of rainfall.

The climatology behind that is more intricate than the phrase global warming suggests. El Niño is a natural, periodic phenomenon that recurs every two to seven years. Its direct effects register in the Pacific, in the Americas, in Australia and parts of Asia. The signal reaches Europe mainly in winter; in summer a weakening subtropical jet stream dampens that teleconnection considerably. The extreme heat over European vineyards in the summer of 2026 is therefore a matter of overlay: a Pacific heat impulse meeting a continental system of blocking high pressure. France recorded the hottest July in its history of measurement, Britain its warmest summer since records began, averaging 16.5 degrees. According to the Met Office, climate change has made such a summer 130 times more likely.

Micromanaging the Acid: A Poker Game in the Vineyard

Across the vineyards of central Europe, the heat accelerated ripening dramatically. Stefan Kast, managing director of the Austrian Wine Growers’ Association, reported sugar levels in mid-August averaging around 17 °KMW, well above the long-term mean. Grüner Veltliner at Klosterneuburg had already reached nearly 20 °KMW by that date.

The trouble this year lay in the rapid collapse of the acid, which gives a wine its structure and its capacity to age. Sustained August temperatures drove acidity down across the board. Where 2025 offered a stable foundation of 13.7 grams per litre, cellar masters in 2026 were working with 9.0. The optimal picking date narrowed to a matter of days. Kast summarised what the vintage demands accordingly: close observation, and a sound instinct for the right moment. The Federal Office for Viticulture and Pomology at Klosterneuburg held one variable open, noting that sufficient rainfall could still stabilise both sugar and acid values.

In Puligny-Montrachet, Jean-Michel Chartron began picking on 12 August and finished on 21 August. With the Crémant fruit above all, the sugar could not be allowed to climb further without costing the acidity the wine needs. A Burgundy harvest brought in complete before September opens is something he has never seen. At the Hospices de Beaune, cellar director Ludivine Griveau sent the first pickers into the rows on 16 August.


Excellent Quality, Halved Yields: The Paradox of the 2026 Harvest

In the Burgenland, Austria’s warmest wine region on the Hungarian border, the berries came off the vine small and gave less juice, and growers there expect roughly 30 percent less fruit than last year. Around Vienna the figure is about 25 percent. At the press conference opening the main harvest on 24 August, Herbert Oschep of the regional body Wein Burgenland counted a great many days of heat and far too little rain, and added a sentence that has nothing to do with the weather: the time of handing wine out is over, the time of selling it has begun.

How much smaller became clear two weeks later. On 7 September, Agreste, the statistical service of the French agriculture ministry, published its estimate for the season: French production stands at just under 33.9 million hectolitres, six percent below an already weak 2025 and 17 percent below the five-year average. On the figures of the International Organisation of Vine and Wine, that is the smallest French harvest since 1957. The statisticians name two causes. The drought and the heatwaves of the summer account for one part. The other is the vineyard itself, which continues to shrink under the state grubbing-up schemes that drew some 6,000 applications at the end of 2025, chiefly from Bordeaux, the southwest and Occitanie. Within that national figure the regions pull far apart. Champagne is hit hardest, with the harvest halved against 2025 and a fourth cut to its quota in a row. In Languedoc-Roussillon the volume is five percent above last year, but still eight percent below the five-year average.

Bordeaux opened picking for its Grand Crus unusually early, on 17 August; the trade body CIVB speaks of a historically early and promising vintage. Further south the picture turned again. Italy and Spain had the benefit of a wet winter, and with reserves well filled their vines came through the summer in better condition, so the must arrived in the cellars in balance. The decisive criterion for the 2026 vintage was, in the end, the water banked in the soil before July.


The Physiology of Stress: When the Olive Tree Drops Its Fruit

Different biological rules govern the olive grove. A degree of water deficit is welcome there, because it concentrates the polyphenols in the oil, the compounds responsible for bitterness, pungency and shelf life in a serious product. They also underpin the health claim permitted under EU Regulation 432/2012, which requires a minimum of 250 milligrams per kilogram. Early-picked green olives typically reach values between 1,000 and 1,500 milligrams per kilogram, as laboratory analyses at the University of Córdoba confirm. Harvest strategy is what decides this: picking early and green delivers those figures, while fruit taken at full ripeness for volume production falls well below them.

Push the drought stress too far, however, and the effect reverses. To secure its own survival, the olive tree sheds its fruit early and holds on to moisture. Where exactly the line runs between beneficial and damaging stress remains agronomically unresolved.

Mediterranean producers have been living at that threshold for years. After the severe drought years between 2022 and 2024, which the market leader Deoleo described as one of the most difficult periods in the sector’s recent history, the past season brought little relief either: the International Olive Council puts global production for 2025/26 at around 3.44 million tonnes, four percent below the previous year. The Andalusian association COAG reported losses of 30 percent even in irrigated groves, while the unirrigated land that accounts for 70 percent of the regional area could barely be assessed at that stage. Asaja Córdoba recorded 21 percent less oil in Spain’s second-largest province.

For the coming 2026/27 campaign no figures exist yet. The heatwave of 5 to 9 July, however, caught the olives precisely during the sensitive phase of fruit development. The association APAG Extremadura and the trade publication Olimerca are accordingly warning against early forecasts. Greece, Turkey and Croatia report fruit falling before it ripens and harvest losses compounded by wildfire. Across central and northern Italy almost no rain fell between mid-June and early August, leaving unirrigated olives undersized on the branch. The persistent dryness did carry one benefit, in suppressing the olive fly that caused heavy damage the year before. Whether any of it becomes a substantial oil now rests on the rain of September and October.


Shorter and More Brittle: How the Drought Weakens the Linen Fibre

Where wine and olives can concentrate their compounds under extreme conditions, textile fibre simply loses substance when the water runs short. Research at the Institute of Natural Fibres in Poznań, comparing three varieties across three harvest years at defined irrigation levels, shows that drought during the growing phase reduces both the linear density and the tenacity of flax.

Europe’s luxury linen industry depends on the temperate maritime climate of the coastal strip running from Normandy to the Netherlands. Three quarters of the world’s scutched flax comes from this region. The plant grows there without artificial irrigation and needs steady moisture across roughly 100 days to develop the fine fibres, often more than 50 centimetres long, that the trade requires.

The cooperative Terre de Lin, representing some 750 farmers across more than 20,000 hectares, supplies weavers including the Italian Albini Group, which marks its 150th year in 2026 and whose linen reaches Turnbull & Asser on London’s Jermyn Street among others. Anne Nizery of the cooperative stresses how exact the growing conditions have to be: sowing begins from 15 March at a soil moisture of around 18 percent, and flax returns to the same plot only once every six or seven years, for the sake of the soil.

In the spring of 2026 those conditions failed to align. The Alliance for European Flax-Linen and Hemp reports sowing completed under favourable circumstances by mid-April, but records an April that stayed unusually dry and left the seedlings with little rain. Cotton in the American southwest shows a related pattern. Cellulose forms best between 25 and 30 degrees; above that the plant loses its capacity to produce the sucrose that serves as the building block of cellulose and the driver of fibre elongation. Heat stress has already cut yield potential there by 26 percent, and breeders now market drought-resistant varieties intended to hold staple length under conditions that would otherwise shorten it.


The Dictate of Water

The account of the summer of 2026 comes down to a single resource. Water decided why the harvest in Italy and Spain came in more balanced than in Burgundy, which lost around 40 percent of its volume. Water determines over the coming weeks whether Mediterranean olives can still build sufficient oil. And water sets the tensile strength of the linen in the fields of Normandy.

A strong El Niño redistributes rainfall across the planet and pushes established agricultural systems out of step. This year’s harvest has moved the criteria of quality: it forced an unusual density in the wine, brought the olive to its biological limit and stripped substance from the textile fibre. The grapes are in the cellars, the olives still hang on the trees, the flax of this season is being retted. The precise data will be established over the coming months. The foundation of European agricultural luxury, however, has already shifted this summer.
